Burgers and Red Pepper Salsa

These burgers are excellent for kids just in from school.

Burger with Red Pepper Salsa

(Serves 4)

  • 1 pound ground beef (at least 80% lean)
  • 1 onion, finely chopped and saut├ęd
  • 2 Tbsp.chopped parsley
  • Dash of soy sauce
  • Salt and black pepper
  • Yolk of 1 egg to bind

Spicy Red Pepper Salsa

  • 1 red pepper, seeded and chopped
  • 2 large tomatoes
  • 1 small onion, chopped
  • Juice of half a lemon
  • 1 green chilli, chopped
  • 1-2 Tbsp. olive oil
  • 2 Tbsp. parsley or basil
  • Salt and black pepper

To Prepare:
Mix the beef, onion, parsley, soy sauce, egg yolk and seasoning together.

Shape into 4 burgers. Refrigerate until you are ready to cook.

Pre heat the Microwave Crisper Pan.

Cook two burgers on the Crisper Pan – 3 minutes on the first side and 2 on the second side.

Ensure the burgers are cooked thoroughly by piercing them to see if the juices run clear.

 

To make the salsa:
Pulse all the salsa ingredients in a food processor. This salsa is also great with steaks
